This is more of a case of assembling some key ingredients rather than a cooking recipe but it is one of my absolute favourites and always reminds me of being on holiday. What’s not to like? and to top it all of it takes seconds to make and I’m guessing most of us have a slice of bread, tomato and a garlic clove in the house.
I know they are not everyone’s favourite but I absolutely love anchovies and chuck a couple on top of the finished toast just before eating it.
- Any type of toasting bread can be used but preferably not the white sliced type! I can’t give a quantity as I could just eat and eat it so as much or as little as you like.
- olive oil to drizzle
- 2 peeled garlic cloves
- 2 or 3 tomatoes chopped in half
- 1 small jar of anchovies (optional)
