Chestnut and Celeriac Soup

This soup is incredibly easy to make, full of flavour, taste rich and creamy however is healthy and with chestnuts being relatively low in calories but rich in minerals and vitamins what better thing to have for lunch or as a starter with some tasty whole grain bread.

I often make a larger batch of soup than I require, freeze the rest and then simply defrost and reheat gently when required.

Ingredients

  • 1 medium onion
  • 1 knob of butter
  • 500g vacuum packed or tinned chestnuts
  • 1 1/2 litres of hot vegetable stock
  • 200g peeled celeriac
  • salt and freshly ground pepper
  • milk if required to dilute if the soup is too thick
  • 2 slices of smoked bacon per person

Method

  1. Peel and finely chop the onion and sweat down in the butter in a large pan until translucent. To this add the peeled and diced into 1cm cubes celeriac. Cook over a gently heat for about 15 minutes stirring and making sure the celeriac doesn’t burn.
  2. To the same pan add the hot vegetable stock, chestnuts and bring to a boil.
  3. After 10 minutes the chestnuts and celeriac should be soft and ready to be blended into a smooth soup in either a blender, hand blender or food mixer.
  4. That’s it, the soup is ready!! You just need to season it to taste with the salt and pepper. If you think its too thick just add some milk and gently bring back up to a simmer.
  5. I love to serve this with a couple of slices of crispy smoked bacon per person which you can either roast in the oven whilst making the soup or grill at the last minute and some big chunks of whole grain bread.
