This really is such a simple salad, healthy and fresh. It can be eaten alone or it goes perfectly with roast chicken or my 7 hour roast lamb.
- 2 avocado
- 1 small tin of chickpeas rinsed
- juice of 1 lemon
- drizzle of olive oil
- mixed salad leaves and fresh soft leaf herbs
- cherry tomatoes (my slow roasted cherry tomatoes if you have them to hand)
- 1/2 red onion finely sliced
