Pea and SBJ Clay Pot Roasted Garlic Soup

This soup really couldn’t be easier to make and if you have a jar of the SBJ clay pot roasted garlic already prepared from the bits and bobs recipe page it’s even easier. All you need is a bag of frozen peas, some garlic, Parmesan cheese and some double cream.

Ingredients

  • 600g frozen peas
  • 2tsp SBJ clay pot roasted garlic
  • 1tbsp olive oil
  • 50g butter
  • 600ml hot vegetable or chicken stock
  • 100g freshly grated Parmesan
  • 400ml double cream

Method

  1. Cook the peas in half of the stock for a couple of minutes and then pour into a food processor. Add to this the roasted garlic and blend for a couple of minutes.
  2. Add the Parmesan and butter, blend again.Transfer to a large pan and gently heat.
  3. Add the cream and the rest of the stock until it’s the thickness you like.
  4. Season with some SBJ herby sea salt and serve piping hot.
