Traditional Apple Tart Tatin

I’m not really a dessert fan, give me a slice of any cheese and I’m happy but I do love a slice of a good homemade tart tatin with some cold custard ( I know . . . sorry I hate hot custard)!

Of course you can buy ready rolled pastry if you don’t want to make your own.

Ingredients

for the pastry

  • 225g plain flour
  • 50g chilled butter
  • 50g chilled lard
  • 3 tbsp cold water

for the topping

  • 200g caster sugar
  • 225g butter
  • 5 apples, peeled, cored and quartered
  • small handful of walnuts

Method

  1. To make the pastry mix together the flour, butter and lard in a food processor and add enough cold water to bind it together. Wrap in clingfilm and chill in the fridge for around 30 minutes.
  2. In a non stick frying pan that can go in the oven heat the sugar and butter over a fairly high heat, when the better has melted add the apples and continue to cook until a golden caramel is formed then remove from the heat straight away and leave to cool.
  3. Roll the pasty to a circle just bigger than the frying pan then place on top of the apples tucking it in all the way around.
  4. Bake in a 200°C pre heated oven for around 20 – 30 minutes uncle the pastry is golden.
  5. Leave to cool for a couple of minutes and then turn upside-down on to a serving plate.
  6. Scatter with the chopped walnuts and serve.
