Tomato and Dijon Mustard Tart

This recipe is so amazingly quick to prepare and even quicker if you choose to use bought pastry instead of making your own which of course is absolutely fine.

With just a couple of ingredients and a couple of minutes you’ve a perfect starter for a summer lunch.

Ingredients

for the pastry

  • 250g of wholemeal flour
  • 100g of cold butter
  • 1 whole egg + 1 egg yolk
  • pinch of salt

for the filling

  • 2 finely sliced onions
  • 3 large thinly sliced tomatoes
  • 2 tbs of Dijon mustard
  • 100g grated hard cheese of your choice
  • salt and pepper

Method

for the pastry

  1. To make the pastry simply place all the ingredients into a food processor and mix until a dough is formed, you may need to add a tiny bit of water if the pastry isn’t going together.
  2. Wrap in cling film and chill until ready to use.

for the filling

  1. Roll the pastry to fit the tart tin and spread the Dijon mustard over the bottom followed by the sliced onions and tomatoes, sprinkle over the grated cheese and cook in a pre-heated 180°C for around 40 minutes until the pastry is golden.
  2. I love to serve this with some pesto or my salsa verde full of fresh herbs and spicy peppers.
