I love aioli with almost everything but especially with meats cooked on the bbq.
If I’ve time I make it in a pestle and mortar but there is no shame in making it in a food processor. It’s so simple and really I promise takes seconds to make.
- 2 egg yolks
- 1 clove of garlic crushed or grated
- 1 tablespoons of Dijon mustard
- a pinch of salt and pepper
- 1 teaspoon of lemon juice
- 300ml good quality olive oil
